Depending on the type of dish... Southern, Mexican, etc I have a few choice favs.

If you are doing Mexican there is only one legitimate choice however, and that is chollula. Most everything else is fake Americanized crapola.

I love Chollula on Mexican food. Plain old Tabasco for everything else.

It's the only thing you'll get besides homemade if you go to real Mexico. And I mean real Mexico, not the tourist traps where they cater to Americans mexi-american tastes.

Cholula is good but not that spicy, IMO. I like it a lot but usually like something a little hotter. Have you had this?

One thing that I like about that first pepper sauce is that's it's more of a fine purée type of sauce, not just a liquid.

If I'm gonna do a mexican pepper sauce, it's Valentina's. It's the top seller in Mexico and has a smooth consistancy but pretty deep flavor. It;s usually available in most US grocery stores in the ethnic food section. This stuff is a great dip with tortilla chips.

Riddle me this Batman. How is it that the main ingredient (which by law means it has the most, by volume, of that ingredient in the package), being "green" Jalapeño purée turned out to be a red/ burgundy colored sauce? The chili pepper could alter the color a little but not likely to turn from Jalapeño green to dark red. Just seems odd to me.

I'm definitely not a hot sauce lover but i'll use it every now and then. one I really like is tiger sauce. I put it in chili, on pizza, chicken wings, basically everything. its very versatile.

Had a local one from St. Augustine made from datil peppers called Danny's Bottled Hell. Haven't seen it in years. Was pretty good.

I used to make tiger ribs but it was too much damn trouble. Baste them with tiger sauce heated up with butter every 20 minutes or so after a few hours of smoke. Damn good ribs

I use it to add spice in soups, not as a garnishing sauce.
