And those seats were designed to fit the 25th to 95th %tile male I believe. New jets are designed so the seat is adjustable from the 5th %tile female to the 95th %tile male. All sorts of design requirements flow from that range. Control sticks/yokes, rudder pedals, seat height/forward-aft adjustment, etc. Even then sitting height requirements are important because you don't want the pilot's noggin to be the canopy breaker in an ejection.
