but really- I think the bigger question here is…

First real job out of UF at some nuke plants in southern New Jersey. I sure as fuch was not going to live in southern New Jersey. 4 of us car pooled and drove 60 miles to work. We had 2 rules: we leave the meeting spot at 6:00 AM, no waiting. And no talking allowed in the car. You got a solid week to be the driver, then 3 weeks off. The commuting during those 4 years solidified that I will never have a commute like that ever again in my life.

I lived all over the place in the 4 years that I worked there. Lived in South Philly for a year. Even lived in Elkton Maryland for awhile. I had to drive through 3 states when I lived there. I came to conclusion: that entire region is just a terrible place to live. All of it. If I had to do it now (which WILL NOT happen)... I would absolutely pick the southern New Jersey side. Very north central Florida like.

I’m like the “Old Man” in A Christmas Story, a turkey junkie. I like it anyway I can get it. We’ll have a smoked one and one traditionally roasted in the oven. The latter we brine and stuff with celery, carrots, onions and apples, then rub the skin with some Mazola and black pepper, dust with flour and place it in a browning bag in the roaster and let the oven work it’s magic. After it’s done, we take the stock and make the giblet gravy. It’s always good.
In past years, my MIL would roast a turkey in the oven in a way that seems unique to me. She would pre-heat the oven to ~400 degrees. While that was happening she would prepare the bird, though I have no idea what all she did, and when the oven reached temp she put the bird in and walked away. An hour later she would return, turn the oven off and leave the bird in there until the next morning. It was ALWAYS fully cooked, moist, and delicious when served.

Seedy’s dad did something similar but would cook it fully, then turn the oven off and let it sit to ensure it was the texture of shoe leather. I couldn’t take it anymore so we took over cooking the turkeys. I’d cook four every thanksgiving. Some were smoked and some oven roasted. Did this for 10 years ...until that one year almost everyone got food poisoning and I never had to cook again! :bwahaha:

Edit: it was actually Christmas Eve and it took 24-48 hours for it to set it. We traveled to FL on Christmas Day and had to stop at Denny’s buffet for lunch. We were certain that’s what did it until the other family members started calling. Nobody will ever forget that Christmas. :headslap:

I am really, really, really not a fan of food being left out. The other side of my family does that. We eat around 2 on Thanksgiving. They leave it all out and everyone nibbles on it in the evening. They think I am nuts, but I will make a plate of leftovers immediately after lunch and place MY plate in the fridge. We are always responsible for the ham too. We buy 2 and leave a small one home. That way, I know it is not tainted :lol:

Wasn’t sure if I should like your post or laugh. I can relate. We have a large family so it was about 50 at Thanksgiving and Christmas. Even before covid we were disgusted at the thought of people blowing out the candles on a birthday cake. Called it sneeze-cake. :lol:

Just started brining my spatchcocked bird. Tomorrow it will roast skin up and the skin will be crispy. I eat it all while carving.
I will try to remember to post pictures before carving.

I buy it at the store when my wife asks me too... tomorrow it will come out perfect with perfect gravy 'n schit. It's magic, like laundry and dishes.

Just placed an order with Sonny’s for a pound each of turkey,brisket and pork along with beans, coleslaw and fried okra. This year is a bit different. :lol:
