Back to the subject at hand. Pan seared trout for the fresh water pick. Oysters, fried, grilled, raw, stewed or smoked for the salt water fish. And if you make me pick a finned species, fried mullet.

I'm a seafood fan, but my favorite fish by far is hogfish. I haven't really seen it on too many menus outside of the Keys, though, so many may not have heard of it.

Freshwater, I’m going salmon, though they are technically anadromous. Close runner up for me is Rainbow Trout. I just eat a lot so I need like three of them.

Saltwater, I think a well prepared seabsss is tough to beat. Swordfish or red snapper would be my second. I eat tuna every day, but that’s canned so I’m not sure it counts.

But like Layla, I could eat salmon every night.

Is that the same as a hognose snapper? There was a great local restaurant in PCB named Hog Nose Snapper that we loved but it closed down several years ago. They had several mounted on the wall. What a funny looking fish.

I like seabass too but it is too pricey and its not a real thing. Just a marketing gimmick to sell Peruvian trach fish to unsuspecting Yankees (in the rest of world sense).

Yeah I learned that years ago, but still think it’s one of the most unique tasting fish available. It is pricey though.

Also didn’t throw in this qualifier, but if we’re going straight sushi(nigiri), escolar is probably my favorite. Have never had it cooked though.

Saltwater - in order, mullet, flounder, trout. Fried up in cornmeal with a little salt and pepper. Fry your hush puppies in the same pan. Smoke the mullet if you can.

Fresh - nada.

Yes, it's a funny looking fish and it is sometimes called a hog snapper, even though it's not actually a snapper.

This is one of my top 5 photos with our kids. So much going on here. Lil CD in the back with a nice bream caught at the same time as Lil @Seedy with his very first fish! However Lil CD looked at the size of her fish compared to her brother’s fish and wasn’t as impressed. :lol:

Freshwater - Channel Cat whole (small) or filets (larger)

Saltwater - Red Snapper

Cats are seasoned with S&P, a dash of tabasco and a squeeze of lemon, then dredged in Zatarain’s Fish Fry and fried in oil (peanut is preferable) until golden. Snapper is seasoned with S&P, then dredged in Zatarain’s and deep fried like the Cats. Occasionally, when we get larger filets, we’ll broil skin side down with EVO and season the flesh side with S&P, Cajun seasoning, lemon, butter, chives, sliced onion and tomatoes. Takes about 12 min on “Broil” in the oven. It’s pretty dang good.

Catching would be bass for freshwater and tarpon for salt.
Eating would be not much from freshwater. Grouper and tuna would be neck and neck for salt.
@LaylaGator , salmon sucks out loud. Just sayin.
