I can't seem to find any stats on Jones other than he's only completed 10 passes in his career for 210 yards 1 Td and has a 37% completion average he also rushed for -27 yards on 9 attemts. Am I missing something here because I hope I am.

Nope, all true. His stars are all based on perceived potential. He's actually never had a run over 4 yards.

Dead serious. Urban Meyer and Nick Saban fell in love with him anyway.
What makes anyone think that he will all of a sudden be able read a defense, or be able to make the throws needed when he has only played Qb for 2 games in life. And didn't look good at all in those games. Now I'm not saying that he's not a great athlete but it takes a lot to be a great Qb. This kid might be something special but I'm not so sure as a new coach I'd want a project as my 1st Qb.

A "Qb" should never be asked to run the ball 20 times ever. To me a dual threat Qb is someone who can scramble when needed and run a Qb draw or read option when asked. The definition is a quarterback who possesses the skills and physique to run with the ball if necessary. Corral can run when it's necessary and even run read option if asked but no Qb should be asked to run 20+ times a game.
You began with a bad definition and, thus, ended up dead wrong.
