Outstanding! I'm getting better with this thing. But I'm not kidding myself, it was prime grade and it's a lot easier to cook red meat.

Gonna do some chicken thighs today. Let's see how that goes.

I'm throwing 3 racks of ribs on the Traeger today. Gotta start soon so they are ready for the games.

I made chicken thighs the other night. Too hungry and forgot to take a picture. They turned out really well cook, pleased with how good they did along side asparagus. However, if you use the Traeger Chicken Rub, goes easy on it. That shït is sal-ty!

On what, 225? 4-5 hours?
Yup, thereabouts. Then wrap them in foil with a little sauce and cook on hi for about 30-40 minutes. I'll try to remember some pics.

pork butts/ shoulders have always taken me way longer to cook than any suggested time ice ever seen... figured out that i had to smoke it least 14 hours and started doing them the night before so it was ready the next day and always pulled apart perfectly and not dried out.
Watched a YouTube of Aaron Franklin on how he smokes pork butt...8 hours in the smoker at 275 (5 hours uncovered and 3 wrapped in foil). Tried it on new years eve and turned out amazing. Pulled apart so easy sand i prefer the Texas style with mainly salt and pepper dry rub he uses.

Franklin is spot on in his videos. I have cooked both ribs and brisket the way he recommends and it has been :faint: good every time.

Safe to assume that you cooked it on a Traeger?

Did these bad boys on the Traeger today. With 3 different rubs, we had a blind judging. Funny enough, #1 & 2 were tied but everyone chose the same #3.

Cooked the first hour on 300 and then switched to 275 for the next 2 hours.

Now that I've had a few go around a with the Traeger, thought it was time to revisit my first experience and over come the experience I had with the pork butt. I used the suggestion @-THE DUDE- had with Aaron Franklin. So far, it turning out great.

I seasoned and put it on the Traeger at Midnight last night at 250. Pulled it off at 8:00a to wrap in foil. Will let that go at 275 for another 4 hours. Here's some pics.
