Absolutely love it. Just wish I could spell it.
It’s Conecuh. We buy it pretty regular. Really like the little links, hot or mild, on the grill. Never too dry like some smoked sausage and pretty reasonably priced. Register’s, Bradley’s, and Fason’s are the big sausage names around my parts, and they’re good, but I’d really rather have the Conecuh. Now when I get a hankering for fresh, pan or link, Jones’ Meats in Climax Ga is the best going. Pore ol’ Jimmy Dean May as well be making potted meat.

Fried river bream (from the Apalachicola), cheese grits, hush puppies (Sweet Betsy), baked beans, fresh cut new potato fries. This is the way we did it coming up.

Any time you can get together with family and friends is a great day. Sharing good food together makes it that much better.

@cover2 do you double fry the French fries? I used to fry them at a low temp until the center was done then crank it all the way up and fry again to make them crispy. It was like a French fried mashed potato. So good.

Sometimes I do. Didn’t do the new potato fries today. We’ve got a French fry cutter and they come out fairly small with a little crunch, but not like double frying. Cooking the fish, fries, and hush puppies for 10 had us in a little time crunch, even using 2 cookers. It took 4 cookings to get all the fries done. Just about everybody would ease over to the cooking table to sample the fries when they got taken up.

We always soak them in water for a while and then dry them good before cooking. Getting some of the starch out helps keep them from going totally limp. Most crunch I’ve had from potatoes lately came when we made homemade chips with the mandolin a couple of weeks back. Home cut fries of any kind are always good. We wiped out that whole restaurant pan full today.

Beautiful looking pork chop, Gulf. Love the Brussels sprouts as well. Very underrated vegetable, and great cooked or raw.

But to your healthy meal point, it’s still the weekend.

Light meal of grilled chicken on a bed of romaine with fresh tomatoes, boiled egg, and ranch. The dinner beverage has been in my family for a couple of generations...
