Not dinner time, but the missus made a pan of sausage dudes, pinwheels with Jimmy Dean sausage and cream cheese. Had them with a couple of fried eggs (yolks runny) on top...

Salmon with a homemade mango, jalapeño, garlic, lime, Shi****os, and avocado salsa. Used a cedar plank to “smoke” it on the grill.

Also found this enormous mushroom in the pasture. Thought it was a volleyball at first. Anyone know what it is?

The meal included the catfish, homemade slaw and cheese grits, fries, fresh onion, and a tomato. The fish and raw onion was a staple at the many fish fries I went to growing up...

The fish was good for farm-raised. Fresh is always better, but these filets were pretty close. If you’re ever near Climax (GA, not cuddled up and sweatin’ with that big woman), be sure to stop by Jones Meats. Best beef, pork, and even poultry and fish in the area. Smoked pork chops cut to order, great fresh and smoked sausage, every cut of beef you can imagine, fresh ox tail, and even a barrel full of fresh pork rinds (good for cracklin’ bread). It’s worth the stop.

Mrs G is on another camping trip, so I experimented a bit. I’m generally not a bit fan of NY strips, but I jazzed this one up a bit. I added some mesquite to the charcoal and made a bacon and shallot gravy. On the side is a twice baked potato with a couple of twists; in the mash I included chopped green onions and instead of parm or cheddar on top, I tried an Artigiano with balsamic vinegar cipollipe. (I have no idea what that is, but the free sample at the store convinced me to buy it.) Really, really good.

Wife roasted a chicken with brussel sprouts to go along with a kale mix salad. Wanted/needed a solid pour of scotch, but went with water instead.

A seafood truck comes up to KY a couple of times a month. Picked up some royal red shrimp, grouper and snapper today to freeze. For dinner I made blackened shrimp and grouper tacos. Topped with the last of the 96002F3D-9650-4CBF-9740-788ACA0CFAFC.jpeg spicy jalapeños from the garden.

Mrs G tossed some sea scallops in olive oil with sun-dried tomatoes and pine nuts over linguine. It was excellent. I poured her a nice Falanghina (Italian white) which she claimed was the perfect accompaniment. Cold and rainy day and there weren’t any good games on. Made a chicken corn chowder, homemade bread and an apple pie for a late lunch/early dinner. Cheated and used a frozen crust for the pie.
