Jambalaya started, about to start on the gumbo. Typically have 40-60 people here but COVID, otherwise there would be etouffee, shrimp and oyster en brochette, and bacon wrapped jalapeños.

Not sure if daughter is going to make beignets today or not....

I don’t have much experience with northern gulf snapper. But I tear up southwest fla snapper. It’s the best kind in my opinion

Yeah our snapper down here is much leaner. Not as much meat on the bones as Louisiana snapper
