So the last two days when I start the car up, my AC panel is blank and the "mode" button blinks. After a minute or two the display reappears. This morning same thing, but when I started to defrost just the driver side blew hot air. Passenger side was ice cold. Is that a thermostat issue? Any help is appreciated

sounds like the drive line on the fluglehorn bracket might be smudged up

Not a thermostat issue.
Find MGC relay in underhood fuse block, Turn ac on, if compressor doesn't kick in TAP the relay, If it kicks in you need a relay, if not it may be low on refrigerant or pressure switch. I could tell you how to test relay when removed if you like.
Don't try to shotgun a repair, usually costs more than getting it checked
