I should have clarified that that was a half a pig butchered into chops, shoulder, ground pork etc.

Ground pork doesn’t get nearly enough credit for flavor and versatility. 50/50 with ground beef is the basis for some great meatballs as well as burgers. Some thick chops done right can often rival a good steak. My departed FIL would often remark as a part of the blessing when my MIL would do a pork roast and gravy (which was out of this world) “Lord, I ‘preciate this hog!”

I didn't think you were. I thought that maybe you thought we were cooking a whole, or rather half a hog.

The other thing about getting your pork locally is it has more fat on it. The stuff from the grocery store is soooo easy to over cook because it's so lean.

Here's my next ribeye. He'll be 7 months old in 8 days, he's already right at 700 lbs. May have to buy another freezer to hold the fat bastard in 6 or 7 months.

I've got a friend that grills a damn good steak, maybe the best I've ever eaten or maybe I'm always fairly drunk when I eat them. He called us over last weekend because he had bought a bunch wagyu ribeye's, can't remember if they were $150 a piece or $150 for a 2 pack but they were stupid expensive. I brought over 7 or 8 ribeye's from my last steer, I believe I had about $1.50 to $2.00 a steak in them . He prepared and cooked them all the same, we ended up "letting" the kids eat the wagyu. :lol:

#3. Pee can has a biological function. The other two must be Yankee pronunciations. You know people of the Northern persuasion from Alabama, Georgia, the Carolinas and such.
