Yum! I love gumbo but haven’t made it in years. Our local cajun restaurant is good at it so it’s too easy to get takeout. You inspired me tonight. My family likes my version of jambalaya better though. Tonight I cleaned out the fridge/freezer to make it. Shrimp, ham, sausage, rotisserie chicken, fish, corn on the cob, peas, carrots and a can of rotel tomatoes added to a family sized box of Zatarans Jambalaya mix.

Simple supper this evening. Daughter made a tomato pie with milk, egg, garlic and herb feta cheese, spring onion, dill, parsley, S&P, and plenty of ripe tomatoes (courtesy of my son who works for IFAS)…

I knew that :). But thanks for the thumbs up. Your missus still has some time to further cultivate your culinary tastes. This past Saturday I sliced up a couple of good ripe ones, fried some bacon, toasted some white mountain bread and spread on some Mayo (no Miracle Whip), then put it all together to enjoy the season’s first ‘mater sandwiches. Man they were great! I love ‘em any way I can get ‘em!

I know, you know, I’m not a tomato guy. Like growing them and my boy @crosscreekcooter has sent me some great seeds. My Pops would eat them like an apple. Mrs. NV can’t ever get enough.

Not much to it really for a quick meal. Sure it's not from scratch but it's easy.
I use either one family sized box of Zatarains Jambalya or 2 small boxes. I like to add 1/2 can of Rotel tomatoes but you would probably rather eat roaches first. :lol: Rotel tomatoes add the heat with the chilies so we like it. Add carrots, corn, peas and cook as directed on the box.

Cook the meat in a cast iron skillet and add when rice is finished. Andouille sausage, shrimp, rotisserie chicken and ham are our favorites. (Add spice to chicken and shrimp)

During the Summer we will often ride to Craig’s Country Store (formerly Ware’s) in Climax GA for lunch. They’re only a couple of miles from school and they always have really good fresh vegetables, a choice of meats (fried chicken, roast beef, pork chops, etc.) and dang good sweet tea. A meat and two sides is $8 (tax included) and it has an old country store atmosphere to enjoy.

The butter beans were excellent and the tomatoes and okra are a favorite. Best fried chicken going. Didn’t get a photo, but the cook brought us a fried green tomato that was out of sight. I’m glad little places like this still exist. It beats the devil out of fast food and keeps me connected to the way things were when I was younger.

That looks so good! Brings back memories of mom’s dinner when I was a kid.
Can’t wait for my okra and tomatoes to be ready. Picked green beans and zucchini today. Cooked some dried Lima beans in the pressure cooker for dinner.

Made cheesesteaks with shaved ribeye last night. Seedy started a thing with piling tater tots on top. I’m a fan. :lol:

One of my favorites. We save a ham bone and cook them with it. My grandmama could really make them. She’d always have a raw Vidalia onion sliced when we had them. The little country store had dried limas first of the week. Coulda eaten a plateful of just them and been happy.

That's a pathetic looking chicken leg. I would have sent that pate back. Beans and okra look amazing. No a big chicken breast guy so I would have asked for all dark with a decent leg.

Looks like it needs some melted provolone and mayonnaise, not miracle whip. I like the addition of the tots.

Buttered the bun in the oven first and then added provolone directly on there. No Mayo for this family.

It’s not Four Seasons or French Laundry. The cook is an older black guy missing an eye that carries on a constant repartee with the customers, but like ”Fats” said of Mr. Nightlinger in The Cowboys, “that sonovabitch cooks better than my mama!” You can talk all that cultured shti you want, but come on back to this part of the country and let me take you to Ware’s and you’ll be buck dancin’ with the tattooed chick that fixes your plate after beggin’ for one more old crippled drumstick!

My good wife gets the inside Filet and I eat the Outer Ring IMG_2175.JPG The peppers (and many others) were bacon wrapped for the Florida-ugay game but we had to cancel that trip. Of course we won.
