Looks like it needs some melted provolone and mayonnaise, not miracle whip. I like the addition of the tots.

I’m particular, and a bit unorthodox with my Philly cheeses, but provolone and mayo are a must. That and the bread are the cornerstones. The moment cheese wiz is mentioned, I immediately know we’re dealing with the type of Philly fan that Douglas78 is always talking about.

First attempt at pork belly burnt ends. Got a little distracted and it smoked a little too long so it’s tougher than I wanted but the flavor is unreal

Wife made an old pasta she used to make but kind of forgot. It’s mentioned in then cartoon movie Luca that just came out, so she made it tonight. Basically a pesto with potatoes and peas with linguine. Used the pesto on some chicken breasts as well.

Rubbed down the yardbird thighs for the grill/smoker later today and finished a nice Penne pasta salad with Hearts of Palm, roasted peppers, Roma Tomatoes, chunks of fresh Mozzarella, fresh basil leaves and lightly mixed with a homemade roasted garlic and Balsamic dressing. The key to this pasta salad is NOT to over dress it with the dressing....just enough to make the kosher salt, fresh cracked black pepper and grated Asiago cheese stick to it.....

The yardbird thighs get rubbed down with homemade rub then placed on a grill on low heat after smoking some wood chips and cooked slowly enough to pick up a decent amount of smoky flavor. I don't have a smoker so I actually turn the grill on and off several times to allow the chicken to pick up as much smoke flavor as possible without over cooking or drying out the chicken. They're then placed on a baking sheet and brushed down with some spicy homemade BBQ sauce and allowed to "sit" in convection oven at 250 degrees for about 35 minutes...

Other than that were going to make some skillet fried potato's, Hot Dogs for the kids, some fresh made onion dip and chips and store bought ice cream and petite fours for dessert . Keepin it simple this 4th of July.

I’ve never had soft shell turtle, but have in years past had gopher (before they became fairly scarce). I’m wondering how it and soft shell compare taste-wise? That turtle looks great. We had fried green tomatoes Sunday. They looked just like yours and were some kinda good. During the summer months, especially when we would be frying fish, green tomatoes were always part of the meal. Frozen, I’d bet that if you don’t live on a dirt road, you’ve probably spent time on some!

If you are a Native Floridian and were raised in south Central Florida from Lake Kissimmee area down to Okeechobee the chances are at least 95% that you have eaten soft shell turtle. When I was at UF it was the feature cuisine at the Yearling Restaurant on Cross Creek. When I was a kid I used pick up gophers crossing the road, take them to those sand hills around Frostproof and set them under a palmetto and watch them dig a new hole. Never had the heart to eat one though many people did. I used to do business with an old cattleman, kind of a mentor, and he used to say " The problem with the world today is there aren't enough dirt roads".

I always wanted to eat at The Yearling, but the one time we went by there, it was closed for a spell. We didn’t eat a bunch of gopher and I think the reason was the same feelings you mentioned. They were pretty good, however. It is amazing how quickly they can dig a hole. The best wild game I’ve had lately was fresh gator tail. A buddy I work with hunts them (legally :)) and he usually gets a few of us guys together when he cooks. He soaks them in condensed milk for a day or so, then coats them with Zatarain’s fish fry. It’s hard not to eat too many!
