Marinated flat iron steak from the egg, potato and corn salad with basil, pancetta wrapped roasted asparagus with an orange-Dijon dressing and a side salad. It was all good, but in future won’t do the asparagus alongside the potatoes. They really did not go together.

Grilled marinated beef tenderloin from the egg, broiled asparagus dusted with parm, crispy smashed potatoes with fried onions and parsley.

The night before I made a real simple pasta dish, bucatini with fresh ground pepper, pecorino romano & chopped cherry tomatoes. It was excellent, but alas, no pictures…..

Mrs. G is in Fla for a long weekend so GBM is doing all the cooking.

Tonight was grilled chicken breasts with a cherry tomato and goat cheese dressing. Orzo, steamed broccoli, and tossed salad on the side. The recipe did not call for it, but I used a bbq dry rub on the chicken and it turned out great.

I had some leftover store bought fried chicken for lunch. That got me thinking about "Southern Fried Chicken;" particularly my grandma's recipe. She would cut up a fryer and soak the pieces in salted buttermilk over night. Cooking was simple: dredge the pieces in peppered flour, dust them off and fry in about a half inch of lard (later she used Crisco but...) in a large cast iron skillet. Drain on a brown paper bag and salt/pepper to taste. Southern Fried is NOT deep fried; it is pan fried and turned over. Anyone else have the same memories?

Batter and Breaded pan fried chicken is nutritionally very similar to deep fried.. It is the breading that holds the oil.

Corn Oil is used mostly...peanut is preferred in Louisiana.

The milk is the binder...egg works nicely. The more times you repeat the breeding...batter, breader, batter, breader...you go from crispy to extra crispy.

Actually, I just did that to the inside tenderloins of a Wild Turkey breast. Wasn't able take pictures and I used Toney Chachere's Creole seasoning but it was great!

Don’t know my grandmother’s recipe but it’s still the best fried chicken I have ever had. Every time we went to dinner that was the menu, even on holidays.

We had some of the most amazing food in Costa Rica. I wasn’t expecting more than rice, beans and plantains but the restaurant a few doors down from our Air BNB knocked it out of the park. We ate there three times and everywhere else was goodish.
