I bought a Ninja XL foodi grill that I take with me when I'm on a consulting gig. It's great for hotel cooking.

I took a rack St. Louis, salt and peppered, then wrapped tightly in Aluminum foil. Put it in the Ninja on "dehydrate" for 36 hours. Got them out, poured the grease off, patted them dry and then lathered in BBQ sauce. Set them back in the pre-heated grill at 450F for 5 mins a side.

The best ribs I've ever tasted. As good as when I smoke a whole hog for 18-24 hours. Tender, moist, but not mushy.

In a hotel room ... with store bought bbq sauce.

Learn something new everyday.

Nice! Duke doesn’t get sick from the drippings? I bet he loved it.

We have the ninja foodi 10 in 1 air fryer, pressure cooker, dishwasher, clothes steamer model. It does it all. Cooked a pot roast to perfection in two hours Sunday night. It does an amazing job.

Did my first smoke on the Big Green Egg last weekend. Presentation was a little off because they just fell apart. Best ribs I’ve made by far…flavor was fantastic. The BGE is a game changer even for direct grilling compared to my Weber.

DUKE had the same fate as Gator football. Muschamp was too much for him :(. (He made an the impression on you!). Our walks influenced a few close Gator games!

I only gave Hank about 1/8 cup. I'll mix it with his food each day. If I gave him all of it at one time he would be have to get a separate hotel room!

I love how fast the foodi cooks bacon and chicken. Crispy without the splatters. Does a good job on roasted vegetables too.

Tuscan Chicken and Pasta for supper this evening. Pan roasted the chicken, Tuscan spice blend, and garlic. Then mixed in a sauce of cream cheese, parmigiana, reserved pasta water, lemon zest, more Tuscan spice blend, S&P, diced tomatoes and spinach (wilted). Served over the pasta with a squeeze of the grilled lemon and more parmigiana. It turned out right well. You can substitute shrimp for chicken and asparagus for spinach for a different twist. This is a family go-to.

Daughter cam home from college for the long weekend, so I offered to make whatever she wanted for dinner. She took it easy on me and asked for Spaghetti Carbonara. A simple to make but great pasta dish.
Hot pasta tossed with raw eggs, parm, and S&P and topped with pancetta browned with garlic in butter and oil, and then white wine. Add some flat leaf parsley and presto!

Love carbonara, so simple and elegant. We used to smoke pork cheeks for it back when they gave it away…. Now I just use bacon . Do use whole egg or just yokes

Peas? I'm going to assume that was sarcasm. :eek2: Bacon is of course always good too though it makes the dish a little smoky, but I prefer the pancetta. It's especially good if you are in a hurry as the grocery sells pre-diced pancetta in a 4 oz. package.

I use the whole egg (well two actually). I whisk them with the cheese, and S&P, quite a bit before I toss in the hot pasta. I never understand the folks who use cream; to each his own of course, but the way I do it it really doesn't need it. If your desperate for a little more liquid, reserve some pasta water and add it.

Chicken breasts from the egg topped with marinated tomatoes and onions. Orzo and buttered peas on the side.
The chicken goes straight from the grill into the tomato onion marinade for a few minutes and really picks up a lot of the flavor. I drizzled a little of the liquid on the orzo. Great summertime meal.

You toss the hot pasta right from the colander into the egg cheese mixture and thoroughly mix it. The heat from the pasta cooks the eggs. It melts the cheese as well.

Edit: I’m not eye-talian either.

you cook a lot of pasta. My wife isn’t a big fan of starches so pasta isn’t made a lot here.

do you scramble the egg? I’m honestly fascinated by this.
