I’m going to make an assumption here that you called an 8 pointer as in 4 per side? Out here they only name them as one side so he’s be a 4 point. I was never a hunter but like to hear about peoples hunt. Kinda wished I was.

We have a wedding scheduled for March and as parents of the groom we are to provide the meal for the rehearsal. The kids wanted Mexican and we were pointed toward a husband and wife who regularly cook for large gatherings. We went Sunday after church to an old farm that has been converted to a soccer complex where local and travel teams play. The couple operates a food stand and we checked out the wares…

From left to right is a Chicken Taquito, a Street Taco, and a Quesadilla. Compared to what we usually get at the local restaurants, which is usually very good, this was outstanding! The wife cooked Enchiladas the whole time we were ordering and talking wedding logistics. Her husband handled the condiments and the cash as well as serving us a Horchata, which was quite good. We think we’ve made a good selection for the rehearsal dinner. I’ve only eaten the authentic Mexican cuisine once or twice before and had forgotten how really good it is. The Quesadilla was different from the restaurant style, but once you dressed it up, it was much better! The cheese they used was also outstanding (Cotija?).

Grilled pork chops, sweet potato casserole, and collard greens. The missus and a couple of friends are providing lunch today for a local Alzheimer’s group and the casserole and greens will be a part of that. She fixed some extra, so we got to enjoy it as part of the evening meal.

If I do say so, the collards were pretty dang good. We’ve sort of stumbled on a different way of seasoning that we really enjoy. Traditionally, I’d start with smoked bacon, rendering it in the pot and then wilting the greens in it before covering with water and adding salt, sugar, cider vinegar, and pickled jalapeños. The last time I prepared them I had no smoked meat, so I used a big TBSP of jarred ham bouillon. Was out of cider vinegar and replaced with red wine vinegar. The flavor was pretty amazing with a little bite and no bitterness. That’s now our go to prep for collards and turnips. The only thing lacking was some good cornbread for the pot liquor.

Yum - huge fan of collards. Do you top it with pepper vinegar before you eat them?

Not with the way these are seasoned while cooking. The red wine vinegar (and sugar) along with the pickled jalapeños give it that little bite right out of the pot for me.

Family is in quarantine so a friend ask what she could get for me. I asked for bananas and iceberg lettuce. Seedy wanted to know wth I was making for dinner with those two! :lol:

Friend brought cabbage instead of iceberg lettuce so I remembered my mom making pan fried cabbage and bacon when I was a kid. Good stuff.

Nothing special recently. But wife is sick, so I pan seared some NY strips tonight with garlic cloves, thyme and brussel sprouts. Started with scotch, then wine. And of course, a kale/pea/carrot salad.
