The French use butter in their roux. The Cajuns use vegetable oil in their roux.

So what do Creole's use?

Cajun cooking originally used what was on hand: Butter, Oil, Bacon Fat, Ham Fat…

Roux 50% flour and 50% oil or fat. The flour browned: Dark, Brown, Light or Blond

And what oil is prefered?

Peanut would be my guess based on the neutral taste and high smoke point.

Peanut is correct. It was available and flavorful, it browns well And it does have a slightly higher flash point.
