Jerk chicken thighs from the egg with Jamaican red beans and rice. The marinade had a couple of scotch bonnets diced and puréed into mix and by itself (the marinade - more of a paste really) was smokin hot. Somehow, it didn’t translate to making the chicken crazy hot. There was the hint of hot and phenomenal flavors over all, but I have no idea where the heat went.

I love dishes with heat, but using peppers as hot as scotch bonnets can make it difficult to strike the right note, so to speak. Sounds like you hit it.

I imagine the scotch bonnets took it to another really good level. Love it!
When I was dicing them - with gloves on - I could feel the heat coming off them and my eyes were starting to water. Not sure I could cut up more than three or four of those things. That is one bad ass pepper.
