Cooked this bird up tonight. She was so moist and juicy. Beer can chicken with proper tools.

Looks like a lager or pale ale in the upper right hand corner.
In my experience I have found Oktoberfest works wonderful with whole chicken.

Thanks. Not sure if you’re asking if it’s olives, or why they’re in the dish. But yes, they’re Castelvetrano olives. Maybe the only thing I ever get at Whole Foods. For whatever reason their quality of olives is great.

And yeah, they add a needed acidity and freshness that helps cut the richness of the meat, which has wine and thyme and other hearty flavors.
Was asking for the "what", not the "why". The why makes perfect sense. I too cook with olives, quite often, for the same reasons.

This was 4.5 pounds ground chuck
3 onions
10 cloves garlic
2 zucchini
Heavy cream
Bag cauli rice
I typically put mushrooms and processed kale in it, but was cleaning out fridge.
5 teaspoons diamond kosher salt
3 teaspoons coarse black pepper
Bit of cajon seasoning
6 eggs

light sautés of onions, grated zucchini and garlic in bacon fat. Add cauli rice, throw in oven to drive off moisture. Cool.

add eggs to bowl, wisk in spices. Add meat and veggies . Add some cream for moisture.

form loafs, bacon. I slow smoke it at about 200 for 1.5 hours then up to 250 till temp at 160.

And I say diamond salt, you cannot put that much morton kosher or table salt in.

The filet looks wonderful . And when done right risotto is as good as it gets .

Thanks! Just started risotto a few months ago trying to duplicate a Parmesan risotto with smoked short ribs at one of my favorite restaurants...and it keeps getting better

On tenderloin I have been smoking them for a bit lowww and then into a cast iron....

for today, lucked into some flounder yesterday. Lightly blackened and served with spinach, cabbage, aged white cheddar and a datil pepper baja sauce. Should have made bacon bits...

Panhandle high end dining. Mick Ultra pairs well with this fine Southern cuisine. Tomato season requires this dish regularly. Bon Apetit, “fellers!”
