Tried a “healthier” (non breaded) version of Hot Chicken. Seared on the cast iron skillet and 20 minutes in the oven and it came out great. The crispiest skin I’ve ever gotten on chicken. Finished off with some hot honey

Never heard of Nashville hot chicken? Typically it’s fried chicken that is very very spicy
Nope. Never heard of it. There’s something coined Nashville Hot Chicken that’s fried chicken with hot sauce? That’s been around for centuries.

Grass fed Filet Mignon Spinack Salad with Garlic Herb Roasted Potatoe Wedges, Blue Cheese, and Grilled Jalapenos. No wine.....dry January for this Phan, but a sturdy Howell Mountain Merlot or McLaren Vale Shiraz would be a great rinse.

Penne in white wine sauce with mushrooms and leeks. Really, really good. For those who just have to have meat, sliced grilled chicken would have been a nice addition.

Looks great GBM. I’m a protein junkie but definitely join you in the resistance to always putting some type of meat in pasta. It generally doesn’t belong.

Out to eat. Not the best picture quality. Giant beef ribs (I ate 2 of the 5) fries, grilled corn on the cob with Parmesan cheese.

Looks great GBM. I’m a protein junkie but definitely join you in the resistance to always putting some type of meat in pasta. It generally doesn’t belong.

And the wine?

There is some protein in the sauce(butter, cream, and parm), but I’m usually with you on meat.

Yeah, of course. I meant more along the lines of actual meat. I eat a ton of meat, but love pasta and enjoy it being the star. I had to deprogram my wife when we got married that there’s a reason it’s called a pasta course. It doesn’t have to have meat in it.

Pretty simple and quick to put together. A can of corned beef and a can of hash, a big can of crushed tomatoes, one onion, a head of cabbage, some chipped up bacon (pre-cooked, salt and pepper to taste. Let it simmer for a couple of hours. My mama made this quite a bit when I was growing up. The cans of corned beef used to be a lot cheaper, but it was hearty and filling. If it’s too many cans for you, you can get a half pound or so of corned beef from the deli and stew fresh tomatoes instead.

Publix had some fried butterfly shrimp in the deli today. $8/lb. Pretty darn tasty.

Had my first sous vide tonight. Some friends had my wife and I over for our anniversary and used it. Filet, basil infused mashed potatoes with parsley and roasted carrots.
