First of all I think it’s about time we had a holiday that wasn’t race, gender, or…(air quotes) lifestyle specific. In National Chicken Wing Day we not only celebrate getting together with friends and loved ones and healthy diets, but also the atmosphere of community that only a sports bar can provide. Oh yes, and draft beer by the pitcher, loud talking, and sports teams loyalty. This is truly an American holiday to get into.

Now, as for the wings themselves, I prefer naked with medium Buffalo sauce (can also choke down a wing or twelve garlic parmesan). Curly fries and a pitcher of Ultra round out a great meal. And don’t forget the carrots, celery, and bleu cheese since I’m health-conscious. We don’t do this as much as we used to since the Hobbit that was near us shut down, but we’ll find a place a few times a year to get back into. The holiday spirit may prompt that this weekend.

Big fan of wings but I make them at home in the air fryer using a traditional Buffalo sauce Alton Brown recipe.

Recently on my trip to Atlanta my niece introduced me to “lemon pepper” wings. It’s an Atlanta thing apparently. They were good but I’ll stick to Buffalo sauce.

As for lemon pepper, they’re good. It’s not an Atlanta thing. I’m an original hot sauce and then garlic parmesan guy.

I think that was just her way of reminding everyone to only take one off of a chicken before you release. It's a little known fact that much like a stone crab will grow back a claw, chickens will grow back a wing

Smoked and then flash fried are the absolute best. I like mine naked and then I can add whatever sauce I’m in the mood for.

I like mine naked. Didn't know that today was national chicken wing day. With that in mind, I may stop and get me some to eat on my drive from Colorado Springs up to Denver this afternoon.

Smoked and then flash fried are the absolute best. I like mine naked and then I can add whatever sauce I’m in the mood for.
We talking wings or some of them big girls in the Jax area?

The original Buffalo wing sauce from the Anchor Bar in Buffalo was butter, vinegar and Tabasco. That’s all. So many places screw that up.
Many chain restaurants pretending to be wing specialists let the wings sit in the sauce too long making them soggy. You fry em, drain em quickly, a quick bath in sauce while still boiling hot, drain again & serve. The originals were naked.
Sauce needs to be agitated frequently otherwise the butter will form a layer at the top. For those who dip sauce out (that’s been sitting) to pour over the wings, they’re making butter wings not Buffalo wings.
Also , wings should be crispy. Ordering them ‘extra crispy’ you get them that way less than 50% of the time. If you don’t fry them hot enough or long enough the fat layer under the skin doesn’t get rendered out and you get a soggy, fatty wing. Yuck. When that happens we take them home and finish them in the air fryer.
Papa Bees in Longwood know their buff wings and have a great beef on weck.

The classic sauce is butter and Franks. I’ve made it with Crystal or Louisiana as well. The difference is Franks has garlic in it.

Some places use butter flavored crisco instead of butter. Butter has water in it, shortening does not.
