Now calling plays is important, but with great SEC defenses other things are also important. The QB must be able to change in real time the play.

As far as I can see, this almost NEVER happens in modern football. What happens is the offense gets to the line of scrimmage and the offensive coaches call out a play to the team all of whom are looking to the sideline and the QB is never asked to actually change the play himself.
