It was the best rack any of us had ever had.

Oh and since it would interest you, we had a 1986 Bourdeaux (Chat. Leoville Barton) alongside. Incredible.

I have a friend who gets a lamb every year and splits it with his kids. He smokes an amazing leg. I’ve never tried to cook anything lamb as I’m not familiar with it. I’m fascinated with trying it. I think you’ve sealed the deal.

Lamb is a paradoxical meat for me. Leg is merely OK to my taste and the smell of any uncooked lamb is almost enough to make me retch. But…..but……but loin chops and rack are two of my favorite tasting meats. When done right, they are both sublime.

My advice to you? Go for it my friend!

Ground up a really nice 11lb brisket and got over 8lbs of meat off it. In honor of Morrison’s Cafeteria I did a Salisbury steak tribute to them on top of mashed potatoes. Fresh green beans and field peas were my sides.

I can remember going to Morrison’s Cafeteria as a kid. It was the only restaurant in the mall usually. And while I hated most of what I ever tried there, and was completely grossed out by the trays, I still remember to this day the Boston Cream Pie Cake they had. It almost made enduring the odd, almost tempura style, breading on the fried shrimp worth it. So good.

I have Lima beans in the freezer too but chose these peas instead. They were great.
I’m re-homing green beans and tomatoes right now to every person I know. Want some?

Sirloin tip steak (not a nice cut either) good flavor pan fried in the cast iron skillet with butter. Veggies all from the garden and broiled in the oven. Decent meal for not much effort.
