Did you cold smoke it?
How long did you cure it?

I cured it for like 9 days, was supposed to be 7 but I had a work trip get in the way. After that you rinse it off and let it sit uncovered in the fridge for 24-48 hours then I cold smoked it.

Only thing I’d change is a bit less salt and different wood. I smoked it in my egg and used my typical lump charcoal and post oak wood which maybe is too harsh for bacon. But I didn’t have apple wood or any fruity wood so I’ll try that next time. Still it was awesome

I made some last year ... smoked with cherry wood. Best bacon I've ever had. Cherry wood is out of this world. (tried Oak, Mesquite, Apple, Pecan too)

I let mine sit in cold water for a few hours to get the extra salt out. (in the fridge).

Then let it sit uncovered in fridge.

It’s so much better than store bought bacon that’s for sure. Maybe I’ll try cherry then. Did you use only cherry? What type of smoker?

I tried a bunch of different woods but cherry tasted the best to me.

I used a small , portable bbq grill with a pellet smoker tube.

Gearing up for Easter lunch.

Doing loaded Mac and cheese. Choices of pulled pork, Nashville hot chicken or brown sugar glazed salmon (son brought it to us from Alaska)!

Cake for dessert. My cousin is one of the best cake bakers ever. She also paints arts & crafts.

Stunning. The artistry on this is beautiful. The attention to detail is amazing and the color combinations are perfect.

How did it taste? I’ve seen some gorgeous artistic cakes that just don’t taste very good.

I didn't get any of this one, she posted a pic because she donated that one to a fundraiser. I've never heard a complaint about her cakes taste. She just retired this year from arts & crafts shows. She receives more cake requests than she has time for.

I know sometimes there’s a whole debate about whether or not we actually made something posted or were simply the recipient of a well cooked meal from someone else. Well, I’ll have you know that in this case, I didn’t do a single thing or have any role whatsoever.

Kung pao shrimp stir fry. I prefer it on the Blackstone so I can pretend to be a hibachi chef but this was easy on the stove.

1713058789041.jpeg Grouper baked in foil on the grill. (Grouper steak sitting on sliced scallions, seasoned with S&P, and smoked paprika, then topped with thinly sliced lemons and a half TBSP of butter. Them wrapped tightly in foil and cooked on the grill at 450. It was supposed to be served with a sprinkling of finely chopped Italian parsley; which I saw still sitting on the counter in a small ramekin while cleaning up - doh!)

Picked the asparagus from the garden today. Shrimp are from the gulf. Tacos had refried beans, yellow rice, cilantro lime slaw and topped with a siracha sauce.

In the words of the kids: It wasn’t even yucky.
