Made rack of lamb on the egg last night (with herb roasted potatoes and roasted asparagus) for the first time. Turned out great.
After seasoning with garlic and S&P, I applied a “paste” made up garlic cloves, shallots, EVOO, Dijon, and fresh rosemary, thyme, and flat leaf parsley. Here’s what it looked like before going on:
