Looks great. The egg was definitely a game changer for us too.

didn’t have fixins for a Cesar dressing, Publix was out of the little fishes..

Looks great. Did you buy them already cut in half or did you do that? If so, why?

Was using the baby Traeger (they fit better) and trying some different rub mixtures. Ends up most everyone preferred my old stand by.

I think my experiment with pellet grills is over. I have two and they are convenient as heck, I Just can’t get the flavor profile you get from a stick burner. Maybe those fancy Lone Star…. But….

I had a 250 gallon tank offset along with a separate vertical smoker :) mounted on a trailer for years. Sold it a while back as the all night cooks got old, as did I. I don’t do large cooks anymore.

Looking at maybe another smaller vertical. Might adapt the Traeger hopper as a slide on/ slide of option when you just want something quick. Big thing with pellet smokers to me is you have to cook really slow to get flavor. Burning sticks, at 300 you still get great smoke.
I never cared for drums and wsm, as I don’t like the taste charcoal imparts versus using splits. Snob right! Pellets are great for a quick smoke on a steak before the reverse sear on the flat top.

Some pimento cheese quesadillas with smoked serano, hangar steak, bacon and pickled japs….

Getting ready to watch Tampa and wait for begging munchkins . Sliders with smoked bacon, Gouda, avocado slice and pepper jelly mayo. Told the wife to quit treating the dog like a cat. He said it was okay as she had a milk bone. ;)

The hunting season is beginning on the farm so it's time to clean out the freezer. Cubed venison steak and rice topped with brown mushroom gravy. Accompanied by roasted peppers, butternut squash drizzled with butter, raw honey and a fresh garden salad.

Made Carbonara (linguine) for the first time…

There are actually more bacon and peas in the dish than the photo might show (that serving was the first from the pot). The flavors turned out quite well, especially a peppery overtone (but not really hot). I’ve read some of you all referring to this, but the kicker was adding an egg yolk at the end of the cooking. A mistake was not adding more parmigiana after serving. Also, I’ve learned to use some reserved pasta water to manipulate the sauce which in this case was cream cheese based. This one is a keeper.

A chorizo and chicken paella. Very different than any other one I’ve made in that it had no seafood and called for Aborio rice. While it may not have been authentic, it was delicious.

This and the company of my good wife is about the only thing I enjoyed last Saturday. Quail cajun injected, wrapped in bacon and seasoned with "Slap Ya Moma" ( bought in Dunedin visiting grandkids) smoked on the Green Egg. IMG_0135.JPG

That looks amazing. Been a long time since I had Quayle. I remember one time in college there was a place that had all you could eat and they were slightly bigger than a chicken wing but we cleaned them out.

Two nights ago I took the dog out and standing in our front flower bed among some hydrangeas was a good sized (for Georgia) doe. My "hunting breed" dog, failed to notice her, did as nature intended, and back in the house we went. Clearly she left some scent because the next morning, standing in the same spot was a buck. It was too dark to see how many points, but after the dog actually noticed him and started barking, he gave us the stink eye and took a couple steps toward us. Discretion being the better part of valor, we retreated to the fenced in back yard and I figured that was the last I'd see of him.
Later that morning I took Fido out for a serious walk and both deer were now together, but standing in my across the street neighbors' front yard. The buck was now clearly identifiable as an eight pointer with a very nicely matched rack. As he was with the doe, he viewed our presence with even less humor than he had a few hours earlier. (It didn't help that the dog was barking her fool head off.) Fortunately the doe got spooked and ran off and the buck, who was clearly trying to hook up with her, trotted off with her. Given that it's the hunting season at the moment, I had to hand it to them for having the good sense to hang out in the neighborhood instead of the woods.

I’m going to make an assumption here that you called an 8 pointer as in 4 per side? Out here they only name them as one side so he’s be a 4 point. I was never a hunter but like to hear about peoples hunt. Kinda wished I was.

Yeah, not a hunter which shows I guess. 4 points per side….
