This isn’t dinner yet, but it will be during the month of January. Best Christmas gift ever - Yeti cooler and a trip to the seafood market before leaving town. Filled it up with XL Gulf shrimp, red grouper, red snapper, amberjack, large Atlantic scallops and a quart of seafood gumbo and seafood chowder. Drove 11 hours home today and just finished vacuuming sealing it to freeze. I think we will get 12 dinners depending on 1 or 2 kids eating with us.

Added a Publix key lime pie on top for Seedy!

Turns out the damned yankees destroyed all the other food in the south and having BEPs meant you wouldn't starve to death. Just more proof W.T. Sherman is synonymous with the Devil Incarnate.

Mine are on the stove now in the pressure cooker. I wimped out and bought a can of collard greens because I’m the only one that eats them.

We are going to dinner with my son and daughter in law tonight as their Christmas present to us so the BEPs will be tomorrow. Had collards last night. Fry onions and garlic in bacon grease until translucent add the fresh collards after thorough rinsing and tearing. Cook down in the grease and onions and then steam in some vinegar and sugar. Serve with pepper sauce. Any true southerner will ask for seconds.

Well, we were fortunate enough that it was a gift. I tried to not take advantage of the situation and only got fresh local seafood. We can get the frozen crab and lobster in KY. It was like a kid in a candy store. It was $250 which is about $20/meal. Dad took me to the seafood market and said to fill it up!
Best.Gift.Ever! (As an adult at a least)

Tonight I fried some scallops and grouper for just me and Seedy. Tried the Gumbo and the seafood chowder.

Friends brought me something I hadn't smoked in a long time, fresh mullet. It turned out great with baked beans and cole slaw as side dishes.

I've never tried mullet before but dad talks about his dad catching it when he was a kid. He would salt it to keep it. I don't think he enjoyed salted but said fresh was great.

Back in the day, especially on the panhandle any country store usually had smoked mullet available. Not so much anymore. When I was a kid most people smoked it or ate it fresh, they never put it in the freezer. When the mullet were running many people would get the roe and not utilize any of the fish itself except for bait. I enjoy smoked mullet and don't get it very often.

My FIL gets teary eyed if you bring him fresh smoked mullet. Grew up in St Pete getting it by the old place at the bridge

Gift from Dad, eh? Is he interested in adopting? I don’t know if you’re dad is the sentimental and sympathetic type, but technically speaking, I am an orphan.

Simple San Marzano based sauce with Calabrese’s, shallots, sausage and basil.

@NVGator just to show the dryness of the pasta. That flat bronzish color is perfect, imo.

I think really well fried scallops may be the most perfect food on the planet. Looks delicious.
