Last day of the last month with an R for a while, so Oyster Brunch @ Rick's on the River.

But I have eaten oysters in Jurne ND Jurly.

Nice. Fresh seafood is always a winner. Who’s having the margaritas at brunch? Hopefully the wife, and your afternoon was legendary.

I’m not a fan of oysters but have always loved the atmosphere around them. Reminds of when I was a kid and my sister would take me to parties where there was a keg of beer and bushels of oysters.

Son works at a seafood restaurant in KY. Monday night oysters are on “sale” for $2 each. Weren’t they .25 back in the 80’s?

Yes, or $10 to $12 for a bushel in a burlap bag, aka a crocker sack to us FL crackers. Buy a sack of oysters, build a fire, let it the coals get to glowing, put sheet of tin over fire and dump oysters on tin. Lots of beverage consumed.

Pork, shiitake mushrooms, & baby bok choy on soba noodles. Like a lot of Asian dishes, the prep takes a lot longer than the actual cooking.

Dang I’m old. They were $6 a bushel when I was a teenager!

I remember as a very young lad going out to Old Tampa Bay at low tide with my late uncle, each of us with a five gallon bucket. Filled both with oysters, then went back k to grandma’s house and shucked them. Oyster stew, fried, and a few were left for anyone wanting them raw. Pollution and yankees ended that memory from ever repeating.

Lunch ... fresh pink shrimp from the Keys, beer steamed with Old Bay, dipped in drawn Irish butter with minced garlic, onions and Italian seasoning. Mmmmm.

I offered one to Hank. He turned his nose up at it. I then dipped in the butter. Hank ain't no dummy. He gave it two paws up.

When I was a boy my little east Tennessee grandmother used to make banana pudding. From scratch. She cooked the pudding/custard in a double boiler with egg yolks, vanilla, sugar and milk. Then made a meringue from the egg whites and sugar. It was the best,. My youngest and my oldest son both love banana pudding. So for my daughter turning 16 today I got up and went at it. The custard would not thicken so it has a cornstarchy taste but it looks good. Now I gotta make one for Spencer next year, Took over 10 minutes to get the egg whites to peak.

Looks awesome and I imagine it tastes great! I made one similar for Easter lunch family get together. Similar recipe, though like @gardnerwebbgator mentioned, no double boiler. Never have a problem getting the pudding/custard to set, but there is cornstarch in the mixture at the beginning with the sugar. 1 TB cornstarch per egg yolk. I’ll always put a sprinkle of Cream of Tartar along with a TB of sugar with the whites for the meringue. No problems setting unless it is damp and humid, but it can be easy to overbeat. Got the recipe from my wife’s aunt. The pudding/ custard is also the base for chocolate and coconut meringue pies. Love to see folks making good stuff from scratch!

Kids are gone tonight. We did a lot of yard work in the fence rows today so after a long nap I was really hungry. Blackened grouper, lobster, jalapeño poppers, baked potato, and asparagus from the garden.

Course ground cheese grits (Anson Mills), soaked overnight, cheese eggs, buttermilk biscuits, hot sausage and country ham.
