Cut a prime rib in half tonite. It was 4.**lb. sliced it down the middle turned in to dual 2.5" thick steaks. Reverse seared with horseradish green beans.

Did a few racks on the Traeger the other day. Rubbed them down with some olive oil and sweet and smoky mesquite seasoning. Smoked for about four hours then cranked the heat for about 30 minutes till the meat started pulling back. Delicious. Meat slid off the bone and tasted like candy.

First of all, this damn thread is on the second damn page, that's unacceptable. If you cook something like a goddamn caveman would, take a goddamn picture and post it like a goddamn man.

Anyway, Brad informed that fresh market had a sale on Prime grade steaks this past weekend. Sent the lady out for some and I cooked them bastards up tonite with a little reverse sear. I read a few places that prime and wagyu grade beef cooks a little quicker than choice and my thermo for water logged over the weekend so I guessed it. Turned out goddamn terrific.

Like a man, I hunted food in the refrigerated section, lit a fire and roasted my bounty tonite. Spatchcocked chicken with chef Paul's on it.

Not the best carving job but it got it done.

IMG_20160312_183249160.jpg After a copious amounts of yard work Saturday I decided to fire up the smoker and burn some flesh, as my friend would say. It was the first nice day off to get outside and spend some time without the threat of cold, rain, or bugs.
Found some boneless, skinless breasts on sale for $1.39/lb so I picked up 10 lbs and smoked 'em all. The meat should feed me & my 3 for a few meals.

Smoked these two birds up last weekend. Did have to do a 25 minute cheat in the oven because of the time change. Still turned out really good.
