Panhandle high end dining. Mick Ultra pairs well with this fine Southern cuisine. Tomato season requires this dish regularly. Bon Apetit, “fellers!”

Is that a BLT? I hate tomatoes. Always have, always will.

Mayo looks good though.

It is a BLT. Tomatoes are like that. Some folks are just turned off by the taste, texture, etc. I can’t get enough of them. Growing up working on a farm, granddaddy always had a big garden with a bunch of tomatoes. He kept a salt and pepper shaker on the dash of his truck for tomato sampling. Fresh and firm with a good acid level is next to heaven. He used to joke that when he was gone he’d be eating “‘maters and manna!” That’s my plan as well.

You basturds are killin me. Last night momma made some fookin white trailer trash haute called hashbrown casserole. While palatable it tasted and looked like taking an All-Star breakfast at Waffle House and scraping it all onto one plate and scrambling it up. Apparently my sister sent her the recipe which called for diced ham for which she substituted SPAM. Made the whole thing complete.
@-THE DUDE- dinner looks awesome, as Sofla said the scallops look perfect but remember real men eat real grits.

@crosscreekcooter Hashbrown casserole makes me think about what we used to eat about 2:00 am Saturday mornings when I was hittin the jukes. There’s a little gas station/convenience store in Climax Ga called Ware’s that does a little lunch and they’ll have a tater tot casserole sometimes that sounds like what momma made you, only they have ground beef instead of ham or spam. It ain’t bad. I’ve eat plenty of spam in my day. Always thought of it as potted meat’s rich kinfolk. I kinda like their recent commercial where they make spam an acronym, something like Snouts, Peckers, @ssholes, and Mmmmmmmm!

I remember when I was young seeing a billboard advertising a restaurant somewhere across the tracks in a little town in Missouri announcing one of their lunch specials that included SNOOT AND EARS with FRESH GREENS. I would imagine it's all in that pot.

The fresh tomatoes are an absolute must and look great . Hard to beat them . Great looking sandwich you got there my man.

I bet that I could eat 6 BLT's made with fresh acidity tomatoes before I had to take a breath. A BLHam is close to it.

Started prepping early today.

tuna salad with celery, eggs, red bell, pickles and pickled jalapeños, blue plate

Got a couple boneless butts on sale this am. Spanked them with some rub and then on the baby smoker

@G8trwood that is some fine lookin tuna salad! Some fresh lettuce and a tomato just picked off the vine and I believe I could finish the whole thing. Them two butts don’t look too bad either!

Campari tomatoes from Sam's is the closest that you will find to an acidity field tomato. They are small but excellent taste.

With the extra time on my hands, I started a little small garden. Something I put down for a while but wanted to get back into. I have 9 tomato plants, ranging from Beefsteak to Better Boys and two types of salad tomatoes, Husky Cherry Reds and Pear tomatoes. The Husky’s are the first to ripen and have a great acid burst to them. All the others have set fruit and are just beginning to ripen. I’m looking forward to the fresh tomatoes for the next 3-4 weeks. I’m ashamed I haven’t gotten back into the garden before now. It has been fairly easy once I got the bed ready. Water early and late, a little fertilizer, and some Sevin for the stink bugs. If you like good tomatoes and can spare the time, it’s a worthwhile undertaking.

Campari tomatoes from Sam's is the closest that you will find to an acidity field tomato. They are small but excellent taste.
Gren, you’ve given me something to research. I’m not familiar with the Campari, but the acid taste you mention is definitely appealing. To me, the salad tomatoes are at their best when just ripe and still fairly firm. As far as that goes, a raw tomato that is mushy is unappealing to me.

I’ve mentioned before about eating at Boss Hines house during the summer while working in shade tobacco. His cook, Lukie (who cooked better than my mama), had fresh tomatoes every day. You could eat them along with your meal or if you had a mind to, you could always make you a tomato sandwich. There was always a loaf of Colonial light bread and a jar of mayonnaise (not Miracle Whip :barfaway:) set out for such. After lunch, all the men would sit on the porch and visit until time to go back to work. A couple wore dentures and would take them out at this time to scrape the seeds out with their pocket knife. Man, that was country lining at its finest.

I bought some Compari's last year at Publix and on a whim germinated the seed. The producer claims they will not be true fruit because they are a hybrid, but I found that not to be true. It's an excellent tomato. This year I'm only growing Super Sweet 100's and Beefsteak. All doing very well.
No more heirloom for me, too many problems. By the way, this is the first year I've grown the Super Sweet 100, I've always grown the regular Sweet 100. These have a fruit that matures probably 20% larger with a lot of double and triple clusters, each cluster has around 20 fruit on each.

Buenos Dias, mi amigos! Being today is Cinco de Mayo (and Taco Tuesday concurrently), I'm looking forward to some good meal reports! The plan at the c2 household is for Carne Asada and the related trimmings (read as Corona and lime). We've got a couple of skirts to grill and my daughter is preparing some guacamole. With any luck, I'll have some pix to share. In the meantime, here's some festive tunes to enjoy as you prepare...
