Have you ever “baked” bacon like that? Some restaurant in Las Vegas had a bacon appetizer that rocked my world, and I found out that they get thick sliced bacon like that, put a thick layer of brown sugar on top, and then bake it until semi-crisp. Maple syrup as a dip...unbelievable.

I have had baked bacon like that before and it’s great but I do prefer pan fried. I like bacon to not be crisp though. Pan fried with black pepper and then dipped in syrup

Venison chili being cooked during the game today.

That looks like some good stuff. Looks like you use light and dark kidney beans; I do the same. If for a cookoff I like to use some type of chunked meat like 3/4 inch diced pork loin marinated overnight for some tooth and then ground venison or venison sausage to fill in the bald spots. My gravy is the same in both If I'm doing a beanless Texas Red (I call it Florida Red cause I use datils along with a smoked ancho chili powder and cayenne).

That sounds amazing! When the kids have friends over and we need a lot of bacon we oven “fry” it on a cookie sheet.

From Saturday night. My SIL came over and brought some ribeyes from her local butcher. Watched the good guys and then Bama-aTm (she’s a Bama grad). Made some wings first (forgot to take pics), and the steaks. She’s now a believer of the egg’s powers! I roasted some fingerling potatoes with garlic, evoo, parsley, & Ital. seasoning. Mrs. G made a Swiss chard soufflé that turned out great. Added a nice vintage Boudreaux and it was a perfect way to end a good fall football Saturday.

Mrs G made some savory lamb chops accompanied by new potatoes sautéed with baby Bella’s and mustard greens. Added a spinach and arugula salad on the side with more shrooms and some of the last of the homegrown tomatoes. She knocked it out of the park. For the second night in a row we drank an old Bourdeaux. Amazing how long those wines can last.

Last day at the beach. We got take out to eat on the patio for lunch. Cajun steamed shrimp, crab cake, shrimp and grits and gumbo.

Fortunate to have a few amazing sunsets this week but tonight was a dud.
