I bought a Ninja XL foodi grill that I take with me when I'm on a consulting gig. It's great for hotel cooking.
I took a rack St. Louis, salt and peppered, then wrapped tightly in Aluminum foil. Put it in the Ninja on "dehydrate" for 36 hours. Got them out, poured the grease off, patted them dry and then lathered in BBQ sauce. Set them back in the pre-heated grill at 450F for 5 mins a side.
The best ribs I've ever tasted. As good as when I smoke a whole hog for 18-24 hours. Tender, moist, but not mushy.
In a hotel room ... with store bought bbq sauce.
