Dinner time

Hmmm lion fish - how was it? I guess you didn’t die so….
getting the feelings back in my hands and feet……just kidding, it was good , a sweet white meat.
While waiting on our table I asked the girl at the front desk how was the Lion Fish

She said it was very popular and said the only way I can describe it is “have you ever seen anything really ugly and was scared to eat it but after you did it was really good and juicy” i lost it right there. I was sold

This embodies all things summer for me! (Ok, that’s an exaggeration) Stuffed beefsteak tomato with rice, okra, corn and topped with garlic seasoning, mozzarella and bacon.

Cooked 2 briskets on Tuesday, mostly to freeze for sandwiches and chili. Fried some okra and jalapeños from the garden. The jalapeños should have had fewer seeds. Didn’t realize how hot these were.

Blushed? No. Gagged a little at the thought of eating frogs or lizards.
In all seriousness, frog legs fried right, and those in the photo are definitely fried right, are very good eating. But it’s not like you see them at restaurants everywhere. For years, the ones we had we gigged and cleaned ourselves. Now you can get them commercially raised. The meat is clean, firm, and white and very good fried as mentioned. I guess it’s a cultural thing and related to where you grew up, rural vs urban.

I get folks eating some nasty things out of necessity but given the choice, I’ll pass.
 
Busy weekend for me, so my wife handled all the cooking.

This turned out pretty good. Shrimp,lobster, asparagus, spinach, artichokes, oven roasted tomatoes in a spicy cream sauce. It would work with chicken too.

You sound surprised that a dish with shrimp, lobster, and cream turned out “pretty good.”

In all truth you would have had to work hard to screw up the ingredients you listed. (I hope this candid assessment of your cooking doesn’t rule out an invitation down the road. I meant it in the nicest possible way.)

This is the last of the zucchini but the grape tomatoes and jalapeños are still going strong. Grilled a pork tenderloin wrapped in applewood bacon.

Ending with mini apple pies from the leftovers of the pie filling we canned yesterday. I used a store bought crust and split it between the two pies so it’s not pretty.

Don’t tell Seedy though. He had to go work on his brother’s router and is texting how hungry he is.
 
Finished up the last of the Roma and San Marzano tomatoes by making salsa today. Very easy recipe and I wish I’d canned some this season.

Wow, this is worst dinner I’ve ever made. Ever. If it were anything other than grouper, it would have gone into the trash. This is criminal what was done to the fish. I kept saying it wasn’t frying right. Unfortunately I grabbed a bag of what I thought was seasoning to fry it but didn’t read the bag. How appropriate - Slap Ya Momma. It was crab boil. To describe how awful it was, I ran the fish under water after frying to get the seasoning off. Every bite still needed a mix of plain baked potato. It still tasted like a tablespoon of salt was dumped on it.

Seedy was a sport and ate it anyway. This will be funny one day. Not today. :facepalm:
